Choosing the Right Potatoes

Cutting the Potatoes
Uniformity: Slice your potatoes into uniform strips to ensure even cooking. Aim for about 1/4 inch thickness.
Rinse and Soak: Rinse the cut potatoes in cold water to remove excess starch, which can cause them to stick together.

 To make French fries crisp, first deep-fry them until half done and then   store in a container or cover with a plastic wrap and place in freezer   section of refrigerator for 4-5 hours. Deep-fry again just before serving.
